Datura — Paris
Datura 一直是我最喜歡的烘焙師之一。他們的淺焙風格,乾淨、透亮、精準,完全改變了我對咖啡的想像。這次 Drop 001,我選了三支 Datura 的藝妓,三個產地,三種處理法。
Datura has long been one of my favorite roasters. Their light roasting style, clean, translucent, precise, completely changed how I think about coffee. For Drop 001, I picked three Gesha from Datura: three origins, three processes.
Datura 是一間位於巴黎的微型烘焙工作室,由 Loïc Perneau 創立,專注於具有鮮明風土特性的稀有微批次。烘焙手法依據每支豆子的個性調整,不套用固定的義式或手沖框架,而是讓產地與處理法本身的表現力主導風味走向。
Datura is a Paris-based micro roastery founded by Loïc Perneau, focused on rare microlots selected for distinct aromatic character. Roast profiles are tailored to each coffee's natural properties — highlighting terroir and process rather than conforming to fixed espresso or filter conventions.

精選成熟度 20–22° Brix 的果實,短時間發酵,三層非洲棚架漸進乾燥,靜置 90 天。乾淨、透亮、茶感十足。
Selectively harvested at 20–22° Brix. Brief fermentation, graduated raised-bed drying, 90 days resting in parchment. Clean, translucent, deeply tea-like.

Apricot jam sweetness, orange blossom from hot to cold. A lactic, oolong-like texture with crisp berries and tangerine in the finish.
