對極淺焙咖啡來說,水質的影響往往比器材更直接。先固定一款合適的水,再調整研磨、溫度與注水,通常更容易找到清晰而穩定的風味。
手沖咖啡用什麼水?
最簡單的答案是:低礦化,但不是零礦物質的水。極淺焙需要足夠的鈣、鎂協助萃取,也需要適量鹼度緩衝酸質;礦物質太高容易讓風味變鈍,接近 0 ppm 的水則可能顯得空、尖銳或缺乏結構。
在台灣,如果想直接開瓶沖,波爾天然水是實用起點。若手邊是 RO、泰山純水、ZeroWater 或 DI 水,建議先加回礦物質,再拿來沖咖啡。
手沖咖啡用水:三段式選擇
Tier 1 — 簡單穩定(不需混水)
- 波爾天然水:總硬度約 50–70 ppm(以 CaCO3 計),是穩定且方便的起點,可直接用於極淺焙手沖。
Tier 2 — 可控與彈性
- 低礦物基礎水 + 礦物質滴劑:使用 RO、純水(例如泰山純水)、ZeroWater 或接近 0 ppm 的 DI 水,再加入 Apax 等咖啡用礦物質滴劑。容易重現,也能依咖啡微調。
Tier 3 — 進階與精準
- 完整 DIY 礦物配方:從低礦物基礎水建立鈣、鎂與緩衝成分的比例。Lightmist 通常從 TDS 約 50–80 ppm 的區間開始,再依杯中表現調整。社群中也會分享實際使用的濃縮比例,Taipei Coffee Group(TCG)成員可取得對應濃縮液作為起點。
咖啡用水的 ppm、TDS、硬度與鹼度
ppm 只是濃度單位,不等於某一種水質指標。看到「60 ppm」時,必須先確認它指的是 TDS、總硬度,還是鹼度;三者不能直接互換。
- TDS(總溶解固體)
- TDS 筆以導電度估算水中溶解物總量,適合追蹤方向與重現配方,但看不出礦物種類或比例。
- 總硬度(GH)
- 主要描述鈣與鎂,通常以 ppm CaCO3 表示。它會影響萃取、口感與風味結構。
- 鹼度(Alkalinity)
- 描述水中和酸的能力,也通常以 ppm CaCO3 表示。鹼度太高容易壓低明亮酸質;太低則可能讓酸感尖銳。

依杯中表現微調
- 風味平淡、模糊:嘗試降低整體礦物量或鹼度。
- 酸感尖銳、口感空:確認沒有直接使用接近 0 ppm 的水,再小幅增加硬度或緩衝。
- 苦澀、乾燥:先檢查研磨、溫度與接觸時間,不要只靠改水修正萃取問題。

What water should you use for pour-over coffee?
The short answer is soft, low-mineral water, but not zero-mineral water. Ultra-light coffee needs enough calcium and magnesium to support extraction, plus modest alkalinity to buffer acidity. Too much mineral content can mute the cup; near-0 ppm water can taste hollow, sharp, or structurally weak.
Three-Tier Water Ladder
Tier 1 — Simple & Aligned (No Mixing Required)
- 波爾天然水: approximately 50–70 ppm total hardness as CaCO3, making it a stable, convenient ready-to-brew starting point.
Tier 2 — Controlled & Flexible
- Low-mineral base water + mineral drops: use RO, pure water such as 泰山純水, ZeroWater, or near-0 ppm DI water, then add coffee-specific mineral drops such as Apax. This is repeatable and easy to adjust.
Tier 3 — Advanced & Precise
- Full DIY mineral recipe: build calcium, magnesium, and buffer ratios from a low-mineral base. Lightmist generally starts around 50–80 ppm TDS and adjusts from the cup. Within the community, we share concentrate ratios, and TCG members may access matching concentrates as a starting point.
TDS, hardness, alkalinity, and ppm
ppm is a concentration unit, not a specific water parameter. A “60 ppm” reading only makes sense when you know whether it describes TDS, general hardness, or alkalinity.
- TDS (total dissolved solids)
- A TDS meter estimates dissolved material from conductivity. It is useful for tracking direction and reproducing a recipe, but it cannot identify the minerals or their ratios.
- General hardness (GH)
- Mainly calcium and magnesium, commonly reported as ppm CaCO3. It affects extraction, mouthfeel, and structure.
- Alkalinity
- The water's capacity to buffer acids, also commonly reported as ppm CaCO3. Too much can mute bright acidity; too little can make acidity feel sharp.

These are practical starting points, not universal targets. Two waters with the same TDS can have completely different mineral ratios and brew differently.
