與 Motors Coffee 的全新合作。果實放入不鏽鋼生物反應器中,以 CO₂ 沖洗後發酵數天,果實內部平均溫度維持在 20°C。隨後移至太陽能乾燥棚的棚架上,在約 80% 遮光條件下緩慢乾燥三週,再短暫使用機械乾燥至含水率 10.8%。
靜置五週後出貨。採收日期為 11 月 17 日。
風味濃郁而有層次,黃色與紅色水果交疊,活潑且花香四溢,多汁而結構均衡。由於生豆極為新鮮,風味預計將隨時間持續演變。
A new collaboration with Motors Coffee. Cherries were fermented in stainless steel bioreactors with immediate CO₂ flushing. After several days of fermentation at an average internal cherry temperature of 20°C, the coffee was placed on raised beds in a solar dryer under approximately 80% shade for three weeks, then briefly transferred to mechanical drying to reach a resting moisture content of 10.8%.
The coffee was stored and rested for five weeks before shipment. Harvest date: November 17th.
The cup is deeply jammy, layered with yellow and red fruit, vibrant and floral with juiciness and balance. The green coffee is very fresh — expect the flavor profile to continue evolving over time.
