Water Guide

For very light roasts, water quality has a more direct impact than most equipment.
Below are three practical starting points — choose based on what you have access to.
Three-Tier Water Ladder
Tier 1 — Simple & Aligned (No Mixing Required)
- 波爾天然水: total hardness ~50–70 ppm (as CaCO3), within our recommended range, stable and convenient.
Tier 2 — Controlled & Flexible
- RO, pure water (such as 泰山純水), ZeroWater, or near-0 ppm DI water + mineral drops (for example Apax) to make small post-brew adjustments. This is a relatively simple and controlled approach.
Tier 3 — Advanced & Precise
- RO, pure water, ZeroWater, or near-0 ppm DI water with a full DIY mineral recipe to build a ~50–60 ppm baseline brew water. This offers the highest level of control. Within the community, we share concentrate ratios, and Taipei Coffee Group (TCG) members may access matching concentrates as a starting point.
On ppm and TDS meters
- ppm is a rough indicator of dissolved minerals in water
- ~50–70 ppm is a practical starting range for light roasts
- A TDS meter measures conductivity — it's a directional tool, not a full mineral analysis
- TCG distributes water concentrates. Details are shared on Discord.
